Sometimes, a classic is best. Right now, I’m craving a hearty and satisfying egg salad sandwich, on whole grain wheat bread, off course. To jazz it up, I often add a few sprigs of parsley and thyme. I love thyme!
Here’s my go-to recipe, for one:
2 hard boiled eggs, peeled
1 spoonful of mayo (not too much mayo for me)
1 sprig of parsley
1 sprig of thyme
salt
black pepper
cayenne pepper
