Tomato Overload

My mother came home this afternoon with a box full of organic tomatoes. As it turns out, one of her friends had three boxes of these little beauties in her house and needed to part with a few dozen of them. As my she plopped the heavy load onto our kitchen floor, I asked her what I think is a very important question, “who’s going to eat all of these.”

So we decided it would be best to preserve the tomatoes before they begin to spoil. I haven’t gotten the ball rolling on the preservation process yet, but this is going to be the gist of it.

Cut the tomatoes in half and place them onto a large tray. Sprinkle them with salt and a few of your favorite herbs, I’m partial to thyme.

Place the tray of tomatoes in the oven (preferably the bottom rack) at a very low temperature, 75 degrees celsius should do it. Allow them to dehydrate anywhere between 6-8 hours. However, the dehydration period depends on the type of tomatoes you are using as well as the wattage of your oven. Meatier tomatoes will take longer to dehydrate, so use your judgment to gauge their doneness.

Pack the tomatoes into a sterilized jar and immerse them with olive oil. You may add more herbs if you’d like as well as a few cloves of garlic and spicy peppers. Store the jar in the fridge and enjoy anytime.

So, next time your mother decides to bring an entire wagon of tomatoes home, you’ll know just what to do.
