What’s your favorite comfort food?
Lately, I’ve had a craving for ooey, gooey homemade pizza. Nothing extravagant really, just a little tomato sauce, mozzarella cheese and a sprinkling of fresh basil. And what better way to top that off than with a delicious glass of red wine.
P.S. I make my own tomato sauce and it couldn’t be more simple. It taste so much better than what you’ll ever find in a can. Even better, it keeps in the fridge for about two weeks.
Ingredients:
You’ll need tomatoes (off course), tomato paste, olive oil, salt, pepper, onion, garlic, oregano, thyme, and wine (optional).
Directions:
Cut tomatoes in half. Sprinkle with oil, salt and pepper, onion, garlic, and herbs. Bake tomatoes for 2 hours or until they take on a shriveled appearance. Remove from the oven and process tomatoes through a food mill. Discard skins. Add wine or water, a teaspoon of tomato paste to achieve desired consistency, bring to a boil, reduce heat to low and cook for 5 minutes.
