I’m spending the majority of today babysitting my godson so I need a quick and satisfying lunch that’s also filling. My choice is simple and delicious, avocado on toast.
Process:
Toast two hearty slices of multi-grain wheat bread and smear a bit of butter on both side. Next, layer a few slices of buttery avocado (not-too-ripe) on both toasts, drizzle with olive oil and season with salt and black pepper. You may opt for cayenne pepper, if you like. For a little extra zing, add a few drops of lemon juice (which concurrently, will keep the avocado from turning that awful brown color). And there you have it, a lazy afternoon lunch.
