I love mangoes, especially, the Francis variety. They’re stringy and fleshy but in the best possible way. The ripe ones are incredibly fragrant with bright yellow skin and green overtones. Francis is primarily grown in Haiti but can be found at your local supermarket from April to June.
A vendor sells Francis mangoes near my home during the summer, so I usually make my way to the unassuming stand at least once a week to load up on them. I just can’t get enough of these saccharine treats. I’ve even developed a method for eating them. As a child, I would sink my teeth into their flesh like a ravenous beast, but as an adult, I’ve learned to pace myself. I now slice both sides with a knife, then I eat them before moving on to the core.
